Luscious Raspberry Cheesecake Cupcakes
Ingredients:
For the Cupcakes:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup whole milk
For the Cheesecake Filling:
8 oz (225g) cream cheese, softened
¼ cup granulated sugar
1 egg yolk
½ tsp vanilla extract
For the Raspberry Filling:
1 cup fresh or frozen raspberries
¼ cup sugar
1 tbsp cornstarch
1 tbsp lemon juice
For the Frosting:
1 cup unsalted butter, softened
2 ½ cups powdered sugar
1 tsp vanilla extract
2 tbsp heavy cream
For Garnish:
Fresh raspberries
Extra raspberry sauce
Instructions:
Step 1: Make the Raspberry Filling
In a saucepan, combine raspberries, sugar, lemon juice, and cornstarch.
Cook over medium heat, stirring until thickened. Let cool completely.
Step 2: Make the Cheesecake Filling
Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
Step 3: Make the Cupcakes
Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
Whisk flour, baking powder, and salt together.
In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
Mix in half of the dry ingredients, then the milk, then the remaining dry ingredients.
Fill cupcake liners halfway with batter. Add a teaspoon of cheesecake filling and a teaspoon of raspberry filling in the center.
Bake for 18–22 minutes. Let cool completely.
Step 4: Make the Frosting
Beat butter until fluffy, add powdered sugar, vanilla, and heavy cream until smooth.
Step 5: Assemble
Pipe frosting onto cooled cupcakes.
Drizzle with raspberry sauce and top with a fresh raspberry.
