Peach Cobbler Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
3 (8 oz) packages cream cheese, softened
1 cup sugar
3 large eggs
1 tsp vanilla extract
1 cup sour cream
2 cups canned peach slices, drained and chopped
1/4 cup brown sugar
1 tsp ground cinnamon
Preparation:
Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
Mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form a crust.
In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla extract, and mix until combined.
Pour cheesecake mixture over the crust and bake for 50-60 minutes, or until the center is set.
In a separate pan, cook peach slices with brown sugar and cinnamon for 5-7 minutes until softened.
Spread the peach mixture over the cooled cheesecake and refrigerate for at least 4 hours before serving. Enjoy!
