Refreshing Lemon Mousse
Ingredients:
1 cup heavy cream
1/2 cup powdered sugar
1/2 cup fresh lemon juice (from about 3-4 lemons)
Zest of 1 lemon
1 teaspoon vanilla extract
1 (14-ounce) can sweetened condensed milk
Instructions:
In a large mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form.
In another bowl, combine the fresh lemon juice, lemon zest, vanilla extract, and sweetened condensed milk. Mix until well combined.
Gently fold the whipped cream into the lemon mixture until fully incorporated.
Divide the lemon mousse evenly among serving dishes or glasses.
Refrigerate the mousse for at least 2 hours to set and chill.
Once chilled, garnish with additional lemon zest or whipped cream if desired.
