2 ripe bananas, mashed

1 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

For the Pudding Layer:
1 package (3.4 oz) instant vanilla pudding mix

2 cups cold milk

For the Topping:
Sliced bananas

Chopped pecans (optional)

Maple syrup (optional)

Instructions:
1. Make the Banana Cake:
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a separate bowl, cream the softened butter and brown sugar together until light and fluffy. Add the eggs, one at a time, and beat well after each addition. Stir in the vanilla extract and mashed bananas.

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in crushed walnuts or pecans (optional).

Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.

2. Prepare the Pudding Layer:

In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form. Be careful not to overwhip.

4. Assemble the Cake:
Slice the cooled banana cake into three equal layers.

Place the first cake layer on your serving plate. Spread a layer of vanilla pudding over the cake, followed by a layer of whipped cream.

Add a second cake layer and repeat the process: pudding layer and whipped cream.

Finish with the third cake layer on top.

5. Decorate:
Top the cake with fresh banana slices, chopped pecans (optional), and a drizzle of maple syrup for extra sweetness.

6. Serve:
Refrigerate the cake for at least 1 hour before serving to allow the layers to set. Slice and serve!
