Shrimp Fettuccine Alfredo:
Ingredients:
For the Fettuccine Alfredo:
8 ounces fettuccine pasta
1 pound large shrimp, peeled and deveined
2 tablespoons unsalted butter
2 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
Salt and pepper to taste
1/4 teaspoon red pepper flakes (optional, for a little heat)
For Garnish:
Freshly chopped parsley
Extra Parmesan cheese for topping
Instructions:
Cook the Fettuccine:
Bring a large pot of salted water to a boil and cook the fettuccine pasta according to the package instructions until al dente (about 10 minutes). Drain the pasta, reserving about 1/2 cup of the pasta water for later use.
Cook the Shrimp:
While the pasta is cooking, heat 1 tablespoon of butter in a large skillet over medium heat.
Add the shrimp and season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
Make the Alfredo Sauce:
In the same skillet, melt the remaining 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, being careful not to burn the garlic.
Pour in the heavy cream, bringing it to a simmer. Stir occasionally and let it cook for 3-4 minutes until it thickens slightly.
Lower the heat and gradually stir in the Parmesan cheese, continuing to stir until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
Combine the Pasta and Sauce:
Add the cooked fettuccine pasta to the skillet with the Alfredo sauce. Toss the pasta in the sauce, adding a little reserved pasta water if the sauce needs to be thinned out. The sauce should coat the pasta nicely.
Serve:
Gently toss the cooked shrimp into the pasta, mixing them evenly.
Serve the shrimp fettuccine Alfredo on plates, garnishing with freshly chopped parsley and extra Parmesan cheese.
Serving Suggestions:
Pair the fettuccine Alfredo with a side of garlic bread or a simple green salad.
For extra richness, you can drizzle a little bit of truffle oil on top before serving.
This creamy, flavorful dish is perfect for a cozy dinner or a special occasion. Enjoy!
