Ingredients:
For the Oat Base & Crumble:
1.5 cups (135g) rolled oats (use certified GF if needed)
1 cup (120g) all-purpose flour (or 1:1 GF blend)
1/2 cup (100g) packed light brown sugar or coconut sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (113g) vegan butter or coconut oil, cold and cubed/solid
For the Key Lime Filling:
1 can (14 oz / 396g) sweetened condensed coconut milk (or make homemade version)
1/2 cup (120ml) fresh lime juice (Key lime or regular)
Zest of 2 large limes
1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch (20x20 cm) baking pan, or line with parchment paper with overhang.
2. Make the oat mixture: In a large bowl, whisk together rolled oats, flour, brown/coconut sugar, baking soda, and salt.
3. Cut in the cold vegan butter or solid coconut oil using a pastry blender, two knives, or your fingertips until the mixture resembles coarse crumbs.
4. Press about two-thirds of the oat crumble mixture firmly and evenly into the bottom of the prepared pan to form the base crust.
5. Make the filling: In a medium bowl, whisk together the sweetened condensed coconut milk, lime juice, lime zest, and vanilla extract until smooth.
6. Pour the key lime filling evenly over the oat crust base.
7. Sprinkle the remaining one-third of the oat crumble mixture evenly over the top of the lime filling.
8. Bake for 25-30 minutes, or until the filling is set and the crumble topping is lightly golden brown.
9. Let the bars cool completely in the pan on a wire rack (at least 1-2 hours). For cleaner cuts and better texture, refrigerate for another hour before slicing.
10. Lift out using parchment overhang (if used) and slice into squares or bars. Store covered in the refrigerator.
