Crunchy Cucumber & Carrot Salad
Ingredients (serves 2–3):
1 large cucumber, thinly sliced
2 medium carrots, peeled and julienned or sliced
¼ red onion, thinly sliced
1 tbsp fresh dill (or 1 tsp dried)
1 tbsp olive oil
1 tbsp apple cider vinegar or lemon juice
Salt & black pepper to taste
Instructions:
Prepare the Vegetables:
Slice the cucumber and carrots into thin rounds or sticks. Thinly slice the red onion.
Toss the Salad:
In a bowl, combine all the vegetables.
Add dill, olive oil, vinegar or lemon juice, salt, and pepper. Toss well to coat.
Chill (optional):
Let the salad sit in the fridge for 10–15 minutes to absorb the flavors.
Serve:
Garnish with fresh dill and enjoy as a side dish or a light snack!
