Strawberry Cake
A light and fluffy homemade cake bursting with fresh strawberry flavor, perfect for celebrations or a sweet treat.
Ingredients:
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
¾ cup whole milk
1 ½ cups fresh strawberries, mashed
½ cup powdered sugar (for frosting)
4 oz cream cheese, softened (for frosting)
2 tablespoons unsalted butter, softened (for frosting)
1 teaspoon vanilla extract (for frosting)
Fresh strawberries for garnish
Directions:
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a small bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients.
Gently fold in the mashed strawberries, mixing just until combined.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
For the frosting, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
Once the cake has cooled, frost the top with the cream cheese frosting. Garnish with fresh strawberries.
