1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
¾ cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups Fruity Pebbles cereal
1 cup white chocolate chips

Instructions:
Prepare the dough:
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy. Beat in the egg and vanilla extract until fully combined.
Mix in the dry ingredients:
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix.
Fold in the mix-ins:
Gently stir in the Fruity Pebbles cereal and white chocolate chips using a spatula. The dough will be thick and slightly sticky, but that’s okay—it helps the cookies stay soft and chewy.
Chill the dough:
Cover the dough and refrigerate for at least 30 minutes. Chilling helps prevent the cookies from spreading too much during baking.
Preheat and shape the cookies:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out tablespoon-sized portions of dough, roll them into balls, and place them on the prepared baking sheet about 2 inches apart. Press a few extra Fruity Pebbles on top of each cookie for added color and texture, if desired.
Bake the cookies:
Bake for 8–10 minutes, or until the edges are lightly golden but the centers still look slightly underbaked. The cookies will continue to set as they cool.
Cool and serve:
