Tiramisu Cupcakes

Ingredients:

For the Cupcakes:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1/4 cup brewed espresso or strong coffee, cooled
For the Mascarpone Frosting:
8 ounces mascarpone cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream
For Garnish:
Cocoa powder for dusting
Chocolate shavings or cocoa powder
Directions:

Prepare the Cupcakes:
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk and brewed espresso. Begin and end with the dry ingredients, mixing until just combined.
Bake the Cupcakes:
Divide the batter evenly among the prepared cupcake liners, filling each about 2/3 full.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and transfer the cupcakes to a wire rack to cool completely.
Make the Mascarpone Frosting:
In a mixing bowl, beat the softened mascarpone cheese until smooth.
Add the powdered sugar and vanilla extract, and beat until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
Frost the Cupcakes:
Once the cupcakes have cooled completely, pipe or spread the mascarpone frosting onto the cupcakes.
Dust with cocoa powder and garnish with chocolate shavings or cocoa powder.
Serve:
Serve the Tiramisu Cupcakes immediately or store in the refrigerator until ready to serve.
