Only 3 ingredients and absolutely no fuss β these Rolo Ritz Cookies are about to become your favorite go-to treat! Buttery, salty Ritz crackers sandwiching a gooey caramel Rolo, then dipped in luscious melted chocolate. Crunchy, chewy, salty, and sweet β theyβve got everything! π₯π¬
π Ingredients:
1 sleeve Ritz crackers (about 30 crackers)
15 Rolo candies (unwrapped)
1 Β½ cups melting chocolate (milk or semi-sweet)
π©βπ³ Directions:
Preheat oven to 300Β°F (150Β°C) and line a baking sheet with parchment paper.
Assemble: Place half of the Ritz crackers (flat side up) on the baking sheet. Top each with a Rolo candy.
Bake for 3β5 minutes, just until the Rolos are soft but still hold their shape.
Sandwich: Quickly top each melted Rolo with another Ritz cracker and gently press down to sandwich.
Chill the sandwiched cookies in the fridge for 10β15 minutes to firm up.
Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Dip each sandwich cookie halfway (or fully!) in melted chocolate. Place back on the parchment paper.
Set the cookies in the fridge or at room temperature until the chocolate is firm.
