Vanilla Cupcakes with Chocolate Buttercream Frosting
Yields 16

~~Ingredients~~
Cupcakes
1 2/3 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (1 stick) Land O Lakes unsalted butter, room temp
1 cup extra fine granulated sugar
2 large eggs, beaten
2 teaspoons pure vanilla extract
1/4 cup sour cream
1/2 cup buttermilk

~~Instructions ~~
Cupcakes
Preheat the oven to 350F degrees & line muffin tins with muffin papers.
In a bowl add the dry ingredients, the flour, baking powder, baking soda and salt. Sift them together.
In a bowl using an electric mixer, beat together the butter and sugar until light and creamy. Beat in the eggs and the vanilla. Using a spatula, fold in the sour cream. Add 1/2 tof the flour mixture into the butter mixture, on low speed , mix in the milk .Do not overmix. Scrape down the sides of the bowl and add the rest of the flour mixture. Being careful not to overmix.
Spoon the batter into the prepared cupcake holders, filling each about 2/3 full. Bake for 18-20 minutes. Let cool completely before frosting.

Note...Make sure your baking powder hasn’t been opened for over 6 months, if it has get some fresh baking powder.

Chocolate Buttercream Frosting

~~Ingredients ~~
3/4 cup unsalted butter, softened
3 cups powdered sugar , sifted
1/2 cup cocoa powder , unsweetened, preferably Dutch Processed, sifted
1/4 cup milk
1 teaspoon vanilla extract

~~Instructiions~~
Place butter in the bowl of a stand mixer with paddle attached. Beat for 3 minutes or until it becomes pale. If you don’t have a stand mixer, use your hand mixer.
Add half the confectioners sugar and cocoa powder. Beat for 3 minutes - starting slow and increase to medium speed.
Add remaining confectioners sugar and cocoa powder. Beat again for 3 more minutes. Add milk and vanilla extract. Beat again for 2 minutes.
Spoon into a frosting bag and pipe frosting onto cupcakes with a 1M tip, or desired tip for design. If you don’t have a piping bag, place the frosting into a ziplock bag and snip one corner off the baggie and pipe onto your cupcakes.
