Easy Sliceable Smoky Vegan Gouda Style Cheese You Need to Try! 🌱😋
Ingredients:
1 cup (150g) raw cashews, soaked for at least 4 hours or overnight (or quick-soaked in boiling water for 15 mins)
1/4 cup (20g) nutritional yeast
3 tablespoons (24g) tapioca starch (or cornstarch)
1 cup (240ml) water
2 tablespoons refined coconut oil, melted (use refined to avoid coconut flavor)
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Optional: 1/2 teaspoon liquid smoke (ensure brand is halal/suitable if needed)
Directions:
1. Drain and rinse the soaked cashews thoroughly.
2. Add the drained cashews, nutritional yeast, tapioca starch, water, melted coconut oil, smoked paprika, salt, onion powder, garlic powder, and optional liquid smoke to a high-speed blender.
3. Blend on high speed until the mixture is completely smooth and creamy, with no cashew grit remaining. This might take a few minutes, stop and scrape down the sides as needed.
4. Pour the blended mixture into a small saucepan.
5. Heat over medium-low heat, whisking constantly. The mixture will start to thicken quite quickly due to the tapioca starch.
6. Continue whisking constantly for about 5-8 minutes, until the mixture becomes very thick, glossy, and stretchy, pulling away from the sides of the pan. Do not let it boil vigorously.
7. Lightly grease a small bowl or container (about 2-3 cup capacity) to use as a mold.
8. Quickly pour or scrape the thickened cheese mixture into the prepared mold. Smooth the top with a spatula.
9. Let it cool slightly at room temperature, then cover and refrigerate for at least 2-3 hours, or until completely firm and chilled.
10. Once firm, gently run a knife around the edge and invert the cheese onto a plate or cutting board. Slice and serve. Store covered in the refrigerator for up to 5-7 days.
