Zesty Lemon Meltaway Cookies

Ingredients:

1 cup unsalted butter, softened
1/2 cup powdered sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt

For the Lemon Glaze:
1 cup powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest (optional)

Directions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together butter and powdered sugar until light and fluffy.
Mix in lemon zest, lemon juice, and vanilla extract.
In a separate bowl, whisk together flour, cornstarch, and salt. Gradually add to wet ingredients and mix until dough forms.
Scoop tablespoon-sized portions of dough, roll into balls, and slightly flatten on the baking sheet.
Bake for 10–12 minutes or until edges are set but not browned. Let cool completely.
Mix glaze ingredients in a bowl until smooth. Dip the tops of cookies or drizzle over them. Allow glaze to set before serving.
