2 filet mignon steaks
Salt and pepper to taste
2 tbsp olive oil
2 tbsp butter
2 shallots, finely chopped
1/4 cup brandy
1/2 cup heavy cream
1 tbsp black peppercorns, crushed

Prepare the Steaks:
Season the filet mignon steaks with salt and pepper.
Sear the Steaks:
In a large skillet, heat olive oil over medium-high heat. Sear the steaks for about 3-4 minutes per side for medium-rare, or to your desired doneness. Remove the steaks from the skillet and let them rest.
Make the Shallot Peppercorn Cream Sauce:
In the same skillet, melt the butter. Add the shallots and cook until softened, about 2-3 minutes. Add the brandy and cook until reduced by half. Stir in the heavy cream and crushed peppercorns. Cook until the sauce is thickened, about 5 minutes.
