Ingredients:
For the Curry
500g mutton (bone-in preferred)
2 large onions (finely chopped)
2 medium tomatoes (pureed)
3 tbsp yogurt (curd)
2 tbsp ginger-garlic paste
2-3 green chilies (slit)
½ cup fresh coriander leaves (chopped)
½ cup fresh mint leaves (optional)
4 tbsp oil or ghee
Spices
1 tsp turmeric powder
1½ tbsp red chili powder
2 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
1 tsp meat masala (optional)
1 bay leaf
3-4 cloves
2-3 cardamom pods
1 small cinnamon stick

Instructions:
Step 1: Prepare the Mutton
1. Wash the mutton pieces thoroughly and marinate with turmeric powder, 1 tbsp red chili powder, and salt. Let it rest for 30 minutes.
Step 2: Prepare the Base
1. Heat oil or ghee in a heavy-bottomed pot or pressure cooker.
2. Add bay leaf, cloves, cardamom, and cinnamon. Let them splutter.
3. Add chopped onions and sauté until golden brown.
4. Add ginger-garlic paste and cook until the raw smell disappears.
Step 3: Add Tomatoes and Spices
1. Add tomato puree and cook until the oil separates.
2. Stir in red chili powder, coriander powder, cumin powder, and meat masala. Cook for 2-3 minutes.
Step 4: Cook the Mutton
1. Add marinated mutton to the pot and sauté on medium heat for 10-12 minutes.
2. Stir in yogurt, mixing well to coat the mutton.
3. Add 2 cups of water (adjust based on desired consistency). Cover and simmer until the mutton is tender. If using a pressure cooker, cook for 3-4 whistles.
Step 5: Final Touches
1. Add garam masala, slit green chilies, and half of the coriander leaves. Cook for another 5 minutes.
2. Adjust salt and garnish with the remaining coriander and mint leaves.
