Delight in the crispy, golden goodness of these Corn Fritters! Made with sweet corn kernels, these fritters are perfect as a snack, side dish, or appetizer. Serve them with your favorite dipping sauce for an extra burst of flavor!
Ingredients:
1 1/2 cups fresh or canned corn kernels (drained if using canned)
1/2 cup all-purpose flour
1/4 cup cornmeal
1/4 cup grated Parmesan cheese
1/4 cup green onions, finely chopped
2 large eggs
1/4 cup milk
1 tsp baking powder
1/2 tsp garlic powder
Salt and pepper to taste
2 tbsp fresh parsley, chopped (optional for garnish)
Vegetable oil for frying
Instructions:
Mix the Batter:
In a large bowl, whisk together the flour, cornmeal, Parmesan cheese, baking powder, garlic powder, salt, and pepper. In a separate bowl, whisk together the eggs and milk. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the corn kernels and green onions.
Fry the Fritters:
Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the corn batter into the skillet, flattening them slightly with the back of a spoon.
