Blueberry Cheesecake
Ingredients:
• 200 g of graham crackers or digestive biscuits
• 100 g of melted butter
• 500 g of cream cheese
• 200 ml of heavy cream
• 150 g of sugar
• 3 eggs
• 1 teaspoon of vanilla extract
• 200 g of fresh blueberries
• 100 g of blueberry jam
Preparation:
1. Crush the graham crackers into fine crumbs, mix them with the melted butter, and press the mixture into the base of a springform pan. Refrigerate for 30 minutes.
2. In a bowl, beat the cream cheese with the sugar until smooth. Add the eggs one at a time, followed by the heavy cream and vanilla extract. Pour the mixture over the crust.
3. Bake at 160°C (320°F) for 50-60 minutes or until the center is slightly set. Let it cool, then refrigerate for at least 4 hours.
4. Top with blueberry jam and fresh blueberries before serving.
