● 1 lb Irish sausages (or any high-quality pork sausage)
● 1 tablespoon olive oil
● 1 medium onion, chopped
● 2 cloves garlic, minced
● 3 carrots, peeled and sliced
● ½ head green cabbage, roughly chopped
● 2 cups chicken broth (or water, for a lighter base)
Salt and pepper, to taste
● (Optional: 1 bay leaf and a few sprigs of thyme for extra aroma)

📝 Instructions
1: Brown the Sausages: In a large pot, heat the olive oil over medium-high heat. Add the sausages and brown them on all sides. Once browned, remove the sausages from the pot and set aside.
2: Sauté the Vegetables: In the same pot, add the chopped onion, garlic, and carrots. Sauté for about 5–7 minutes until the onions turn translucent and the carrots begin to soften.
3: Add Cabbage & Broth: Stir in the chopped cabbage and cook for another 3 minutes until it starts to wilt. Return the sausages to the pot and pour in the chicken broth. If using, add the bay leaf and thyme.
