Pecan Clusters
Ingredients
- 2 cups pecan halves
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
**Prepare Your Workspace**
Line a baking sheet with parchment paper or a silicone mat. Set aside while you prepare the mixture.
Have all ingredients measured and ready to go for smooth execution.
**Melt the Butter and Sugars**
In a medium saucepan over medium heat, combine the unsalted butter, granulated sugar, and light brown sugar.
Stir constantly until the butter melts and the sugars dissolve, creating a smooth syrup.
**Add Cream and Vanilla**
Once the sugar mixture begins to bubble, stir in the heavy cream and vanilla extract.
Continue cooking for 2–3 minutes, stirring frequently, until the mixture thickens slightly.
**Fold in Pecans**
Remove the pan from heat and immediately fold in the pecan halves using a spatula.
Ensure the pecans are evenly coated in the warm glaze.
**Form the Clusters**
Using a spoon or your hands (lightly greased with butter or cooking spray), drop spoonfuls of the pecan mixture onto the prepared baking sheet.
Shape each cluster into a round or oval form, pressing gently to ensure the pecans stick together.
**Cool and Harden**
Allow the pecan clusters to cool completely at room temperature for 30–60 minutes. Alternatively, refrigerate them for faster setting.
Once hardened, transfer the clusters to an airtight container for storage.
**Serve and Enjoy!**
Garnish with a sprinkle of powdered sugar or drizzle of chocolate if desired.
