Crispy Fish Batter
Ingredients:
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 cup cold sparkling water
1 lb fish fillets (such as cod or haddock)
Oil for frying
Directions:
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Whisk these dry ingredients together until well blended.
Gradually add the cold sparkling water to the dry mixture, stirring gently until the batter is smooth. Be careful not to overmix; a few lumps are fine.
Heat oil in a deep frying pan or pot over medium-high heat. The oil should be hot enough that a drop of batter sizzles when added.
Dip each fish fillet into the batter, ensuring it is well coated. Carefully place the battered fish into the hot oil, frying in batches if necessary to avoid overcrowding.
Fry the fish for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the fish from the oil and place it on paper towels to drain excess oil.
Serve immediately with your favorite dipping sauce or alongside a fresh salad.
