Baked Salmon in Foil with Asparagus
Ingredients:
4 salmon fillets (6 oz each)
1 bunch asparagus, trimmed
3 tablespoons unsalted butter, melted
3 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon Dijon mustard
1 teaspoon honey
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes (optional)
1 teaspoon fresh thyme (or ½ teaspoon dried)
1 teaspoon fresh parsley, chopped (for garnish)
Lemon slices, for serving
Directions:
Preheat the Oven:
Preheat your oven to 400°F (200°C). Prepare four large sheets of aluminum foil.
Prepare the Marinade:
In a small bowl, whisk together melted butter, garlic, lemon juice, lemon zest, Dijon mustard, honey, salt, black pepper, red pepper flakes, and thyme.
Assemble the Foil Packets:
Place each salmon fillet on a sheet of foil. Arrange asparagus spears next to the salmon.
Drizzle the garlic butter mixture evenly over the salmon and asparagus.
Top each fillet with a lemon slice.
Seal and Bake:
Fold the sides of the foil over the salmon, sealing the packets tightly.
Place the packets on a baking sheet and bake for 15-18 minutes, or until the salmon flakes easily with a fork.
Serve:
Carefully open the foil packets, sprinkle fresh parsley on top, and serve immediately. Enjoy with extra lemon wedges if desired!
