Homemade Mexican Pizza
Ingredients:
1 pound ground beef
1 packet (1 ounce) taco seasoning
1/2 cup water
1 (15 ounce) can refried beans
1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped red onion
1/4 cup chopped cilantro
2 large flour tortillas (burrito size)
2 tablespoons vegetable oil or cooking spray
Instructions:
1. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the liquid is mostly absorbed.
3. Preheat your oven to 375°F (190°C).
4. Lightly grease a baking sheet or use cooking spray.
5. Spread a thin layer of refried beans over each tortilla on the prepared baking sheet. This will act as a base.
6. Evenly distribute half of the seasoned ground beef mixture over each layer of refried beans.
7. Top the ground beef with the undrained diced tomatoes and green chilies (Rotel).
8. Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over the Rotel.
9. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
10. Remove from the oven and sprinkle with the chopped red onion and cilantro.
11. Serve immediately and enjoy your Homemade Mexican Pizza!
