Ingredients:
For the Bolognese:
1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
1 (14.5 oz) can crushed tomatoes
1/2 cup beef broth
2 tbsp tomato paste
1 tsp dried oregano
1/2 tsp dried basil
Salt and pepper, to taste
2 tbsp olive oil
For the Garlic Butter Spaghetti:
8 oz spaghetti
4 tbsp unsalted butter
4 cloves garlic, minced
1/4 tsp red pepper flakes (optional)
1/2 cup freshly grated Parmesan cheese
Fresh parsley, chopped (for garnish)
Directions:
Start with the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Before draining, scoop out about ½ cup of the pasta water and set it aside then drain the pasta and set it aside too.
Brown the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook it down, crumbling as you go, until it’s browned and no longer pink.
Sauté the veggies: To the beef, add in the chopped onion, garlic, diced carrot, and celery. Let everything cook together for about 5-7 minutes, stirring occasionally, until the vegetables are tender and aromatic.
Build the Bolognese: Stir in the crushed tomatoes, tomato paste, beef broth, oregano, basil, salt, and pepper. Bring the sauce to a gentle simmer and let it bubble away uncovered for 15–20 minutes. It should thicken up nicely.
Make the garlic butter spaghetti: While the sauce is simmering, melt the butter in a large pan over medium heat. Add the minced garlic and red pepper flakes (if using), and let them cook just until the garlic turns golden and smells amazing about 1-2 minutes.
Coat the pasta: Add the cooked spaghetti to the garlic butter mixture. Toss well to coat every strand. If it seems dry, splash in a little of the reserved pasta water to loosen things up.
Plate and serve: Spoon a hearty portion of the Bolognese over the garlicky spaghetti. Finish it off with a sprinkle of Parmesan and a bit of fresh parsley for a bright touch.
