Amish Cinnamon Sugar Coffee Cake

Ingredients:

For the Cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup unsalted butter, softened
1 cup buttermilk
1 large egg
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
For the Cinnamon Sugar Topping:
1/2 cup granulated sugar
2 tsp ground cinnamon

Directions:

Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan.
In a large bowl, beat together softened butter and sugar until fluffy.
Add in egg and vanilla extract, mixing well.
Stir in buttermilk.
In a separate bowl, whisk together flour, baking soda, and salt.
Gradually add dry ingredients to wet mixture and mix until combined.
Spread half of the batter into the prepared pan.
In a small bowl, mix cinnamon and sugar for the topping. Sprinkle half of it over the batter.
Add remaining batter on top, spreading gently. Sprinkle the rest of the cinnamon sugar evenly over the top.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let cool slightly before slicing and serving warm or at room temperature.
