Mississippi Mud Potatoes
Ingredients
3 lbs potatoes (russet or Yukon gold), diced into 1-inch cubes
1 lb turkey bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup green onions, chopped (plus extra for garnish)
2 tbsp unsalted butter, melted
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish or line it with parchment paper.
In a large mixing bowl, combine the diced potatoes with melted butter, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
Spread the seasoned potatoes evenly in the prepared baking dish. Bake for 35-40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
In a separate bowl, mix sour cream, mayonnaise, cheddar cheese, mozzarella cheese, and half of the green onions.
Once the potatoes are done baking, remove them from the oven and stir in the sour cream mixture until evenly coated. Sprinkle the crumbled turkey bacon over the top.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven, garnish with the remaining green onions, and serve warm.
