225g halloumi
1.5 tablespoons honey
1 teaspoon dried chili flakes (adjust to taste)
120g extra light cream cheese
Pinch of sea salt and black pepper
1/2 teaspoon smoked paprika
1 vegetable stock cube
250g dried pasta
Directions:
1. Mix honey and chili flakes in a small bowl.
2. Boil the pasta as per package instructions, reserving some pasta water.
3. Slice the halloumi into small chunks and fry in a dry frying pan for a few minutes on each side until golden.
4. Reduce the heat, add the spicy honey, and coat the halloumi until golden and crispy. Set aside.
5. In the same pan, add cream cheese, stir until melted, and season with salt, pepper, smoked paprika, and crumbled stock cube.
6. Gradually add pasta water, stirring until a creamy, glossy sauce forms.
7. Add half the halloumi back into the pan, then stir in the cooked pasta until fully coated in the sauce.
8. Scatter the remaining halloumi on top and serve.
