Honey Mustard Cod
Zesty Honey Dijon Cod with Aromatic Dill-Infused Roasted Potatoes
Ingredients:
4 cod fillets (about 6 oz each)
3 tablespoons honey
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon olive oil
Salt and pepper to taste
1.5 pounds baby potatoes, halved
2 tablespoons olive oil
3 tablespoons fresh dill, chopped
1 teaspoon garlic powder
1 lemon, sliced into rounds
Fresh dill sprigs for garnish
Directions:
Preheat oven to 425°F (220°C).
In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, lemon juice, minced garlic, 1 teaspoon olive oil, salt, and pepper.
Place the cod fillets in a baking dish and pour the honey mustard mixture over them, ensuring they're well coated. Set aside to marinate while preparing the potatoes.
In a large bowl, toss halved potatoes with 2 tablespoons olive oil, 2 tablespoons chopped dill, garlic powder, salt, and pepper.
Spread potatoes in a single layer on a baking sheet lined with parchment paper.
Roast potatoes for 15 minutes, then toss and continue roasting for another 10 minutes.
Meanwhile, place the marinated cod in the oven and bake for 12-15 minutes, or until the fish flakes easily with a fork.
Place lemon slices on top of the cod during the last 5 minutes of cooking.
Combine the roasted potatoes with the remaining 1 tablespoon fresh dill.
Serve the honey mustard cod with the dill roasted potatoes and garnish with fresh dill sprigs.
