A crunchy, sweet, and salty mix, perfect for road trips or quick snacks!
Ingredients:
1 bag of pecans (approx. 10 oz / 280 g)
1 bag of cashews (approx. 10 oz / 280 g)
1 bag of almonds (approx. 16 oz / 450 g)
1 bag of dried cranberries (approx. 6 oz / 170 g)
1/2 cup honey
6 tablespoons coconut oil
1 teaspoon vanilla extract
1 1/2 teaspoons cinnamon
Instructions:
Prepare the Liquid Mixture:
In a small saucepan, heat the honey and coconut oil over medium heat until melted and well combined.
Remove from heat and stir in the vanilla and cinnamon. Mix thoroughly.
Combine Dry Ingredients:
In a large mixing bowl, combine the pecans, cashews, almonds, and dried cranberries.
Coat the Nuts:
Pour the warm liquid mixture over the nuts and cranberries. Stir well to ensure everything is evenly coated.
Bake:
Preheat your oven to 275°F (135°C). Spread the mixture onto a baking sheet lined with parchment paper or a silicone baking mat.
Bake for 20–30 minutes, stirring every 10 minutes. For a softer mix, remove after 20–25 minutes. For a crunchier snack, bake for the full 30 minutes.
Cool and Store:
Let the mixture cool completely on the baking sheet. Once cooled, transfer to an airtight container for storage.
