🥗 Mediterranean Mezze Bowl with Halloumi, Hummus & Soft Egg 🍳🧀

🛒 Ingredients
For the Bowl:
🧀 200 g halloumi cheese, sliced thickly
🥚 2 eggs
🍞 2 slices rustic bread (sourdough or ciabatta)
🥒 ½ cucumber, sliced
🍅 1 cup cherry tomatoes, halved
🧅 ½ small red onion, thinly sliced
🌿 1 cup kale leaves, chopped
For the Hummus:
🥫 1 can chickpeas (400 g), drained
🧄 1 garlic clove
🍋 Juice of 1 lemon
🥄 2 tbsp tahini
🫒 3 tbsp olive oil (plus extra for topping)
🧂 Salt & pepper
⚫ Black sesame seeds (for garnish)
For the Dressing (Salad):
🫒 2 tbsp olive oil
🍋 1 tsp lemon juice
🧂 Pinch of salt & pepper
👨🍳 Instructions
Make hummus: Blend chickpeas, garlic, lemon juice, tahini, olive oil, salt, and pepper until smooth. Add 1–2 tbsp water if needed. Top with olive oil and black sesame seeds.
Cook eggs: Bring a small pot of water to boil. Add eggs and cook 6–7 minutes for soft yolks. Cool in ice water, peel, and halve.
Prepare salad: Toss cucumber, tomatoes, onion, and kale with olive oil, lemon juice, salt, and pepper.
Grill halloumi: Heat a grill pan and cook halloumi slices 2–3 minutes per side until golden and charred.
Toast bread: Lightly toast slices until crisp.
Assemble bowl: Add a scoop of hummus, salad, grilled halloumi, half a soft-boiled egg, and bread slices. Drizzle a little more olive oil on top before serving.
🔁 Notes & Variations
Add olives, roasted peppers, or artichokes for more mezze flair.
Swap halloumi for grilled chicken or falafel.
For vegan version: replace egg with roasted chickpeas.
