Three-Cheese Alfredo Chicken Spaghetti with Cajun Velveeta Sauce
Ingredients:
1 ½ lbs boneless, skinless chicken breasts, thick-cut into strips
2 tbsp olive oil
3 tbsp unsalted butter
4 garlic cloves, minced
1 tsp Cajun seasoning
1 tsp smoked paprika
Salt and freshly ground black pepper, to taste
Fresh parsley, chopped (for garnish)
12 oz spaghetti pasta
2 tbsp unsalted butter
4 garlic cloves, minced
1 ½ cups heavy cream
1 cup whole milk
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella cheese
½ cup freshly grated Parmesan cheese
½ tsp Italian seasoning
¼ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
Directions:
1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente according to package directions. Reserve ½ cup pasta water, then drain and set aside.
2. In a large saucepan, melt 2 tbsp butter over medium heat. Add garlic and sauté until fragrant, about 30 seconds. Pour in the heavy cream and milk, stirring until smooth. Lower the heat and whisk in Velveeta cubes until melted and creamy. Add mozzarella and Parmesan, stirring until the sauce thickens into a glossy Alfredo base. Season with Italian seasoning, Cajun seasoning, salt, black pepper, and red pepper flakes if you want some heat. Toss in the drained spaghetti and coat thoroughly. Add a splash of reserved pasta water if you’d like a silkier finish.
3. Pat chicken strips dry and season generously with Cajun seasoning, paprika, salt, and black pepper. Heat olive oil in a cast-iron skillet over medium-high heat. Add chicken in a single layer and sear 3–4 minutes per side until golden brown, with slightly crispy Cajun edges. Reduce heat, add butter and garlic, and baste the chicken in garlic butter for extra richness.
4. To plate, twirl the Cajun Velveeta Alfredo spaghetti into a deep pile on one side of the plate, letting strands glisten with creamy cheese sauce. Arrange the golden Cajun garlic butter chicken strips alongside. Spoon over extra Alfredo sauce and pan butter, then garnish with parsley and a sprinkle of Parmesan.
