Tender Shrimp and Broccoli in a Light Cream Ziti

Ingredients:

250g ziti pasta

1 tablespoon olive oil

2 cloves garlic, minced

250g medium shrimp, peeled and deveined

2 cups broccoli florets

1/2 teaspoon paprika

1/2 cup light cream or coconut milk

1/4 cup grated Parmesan cheese (optional)

1/4 teaspoon black pepper

Salt to taste

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Directions:

Cook ziti according to package instructions until al dente. Drain and set aside.

Steam or blanch broccoli florets for 2-3 minutes until just tender but still vibrant green. Set aside.

In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.

Add shrimp, sprinkle with paprika and a pinch of salt, and cook for 2-3 minutes per side or until pink and opaque. Remove shrimp and set aside.

In the same skillet, pour in the cream or coconut milk. Bring to a gentle simmer, then stir in the Parmesan (if using), pepper, and lemon juice.

Add the cooked ziti and broccoli to the sauce. Toss to coat evenly.

Return shrimp to the skillet and stir gently to combine everything.

Serve warm, garnished with fresh parsley.
