Cozy Chicken & Dumplings Soup

Ingredients:

2 tablespoons olive oil
1 medium onion, diced
2 celery stalks, diced
2 cloves garlic, minced
2 medium carrots, peeled and diced
6 cups chicken broth (low sodium)
2 cups cooked and shredded chicken breast
1 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf
Salt and pepper to taste
For the Dumplings:

1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons unsalted butter, melted
Directions:

Prepare the Base: Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
Add Broth and Chicken: Pour in the chicken broth, shredded chicken, thyme, parsley, bay leaf, salt, and pepper. Stir to combine. Bring the soup to a boil, then reduce the heat to a simmer.
Prepare the Dumplings: In a medium bowl, mix together the flour, baking powder, and salt. Add the milk and melted butter, stirring until just combined. Be careful not to overmix.
Cook the Dumplings: Drop spoonfuls of the dumpling dough onto the surface of the simmering soup. Cover the pot with a lid and let the dumplings cook for 12-15 minutes. Avoid lifting the lid during this time to ensure the dumplings cook through.
Finish the Soup: Once the dumplings are cooked and fluffy, remove the bay leaf. Taste the soup and adjust the seasoning with salt and pepper as needed.
Serve: Ladle the soup into bowls, making sure to include a dumpling or two in each serving. Garnish with fresh parsley if desired.
