Sticky Beef Noodles
Ingredients:
14 oz (400g) sirloin steak, thinly sliced
2 tbsp cornstarch
1/4 tsp salt
1/4 tsp black pepper
2 tbsp vegetable oil
1 red bell pepper, sliced
7 oz (200g) broccoli florets
3 cloves garlic, minced
2 tsp ginger, minced
6 tbsp lime juice
6 tbsp dark soy sauce
6 tbsp sugar
1-2 red chilies, finely chopped (+ more for garnish)
4 spring onions, cut into 2 cm pieces (+ more for garnish)
14 oz (400g) fresh egg noodles
Chili flakes, chopped chilies, and spring onions for garnish
Directions:
Toss the sliced sirloin steak with cornstarch, salt, and black pepper in a large bowl.
Heat 1 tbsp of vegetable oil in a skillet or wok over medium-high heat. Stir-fry the steak slices for 2-3 minutes until browned and crispy. Remove from the pan and set aside.
Add the remaining oil to the skillet and stir-fry the red bell pepper and broccoli florets for 3-4 minutes until softened.
Add minced garlic and ginger, cooking for an additional minute until fragrant.
In a small bowl, whisk together lime juice, soy sauce, and sugar until dissolved.
Return the steak to the skillet, pour the sauce over the beef and vegetables, and add the chilies and spring onions, stirring to coat.
Toss in the fresh egg noodles, stirring until coated and heated through.
Garnish with chili flakes, chopped chilies, and spring onions.
