Ingredients
• 2 lbs (900g) fresh mussels, cleaned
• ½ cup (120ml) white wine
• ¼ cup (60ml) heavy cream
• 1 shallot, finely chopped
• 2 cloves garlic, minced
• 1 tbsp butter
• ¼ cup (15g) chopped parsley
• Salt & pepper, to taste
• 1 baguette, for serving
Instructions
1️⃣ Sauté the Aromatics:
In a large pot, melt butter over medium heat. Sauté the shallots and garlic until soft and fragrant.
2️⃣ Simmer the Wine:
Pour in white wine, bring to a simmer, and let cook for 2 minutes to enhance the flavors.
3️⃣ Add the Cream & Seasoning:
Stir in heavy cream, season with salt & pepper, and mix well.
4️⃣ Steam the Mussels:
Add the cleaned mussels, cover, and cook for 5 minutes, shaking the pot occasionally until the mussels open up.
5️⃣ Garnish & Serve:
Discard any mussels that remain closed. Sprinkle with chopped parsley and serve immediately with crusty baguette.
