For the Chicken:
🍗 Chicken leg quarters: 4
🧄 Garlic cloves: 3, minced
🌿 Dried thyme: 1 tsp
🌿 Paprika: 1 tsp
🍋 Lemon juice: 2 tbsp
🛢️ Olive oil: 2 tbsp
🧂 Salt & pepper: To taste
For the Garlic Mashed Potatoes:
🥔 Russet potatoes: 2 lbs, peeled and cubed
🧄 Garlic cloves: 2, minced
🥛 Milk: 1/2 cup (warm)
🧈 Butter: 2 tbsp
🧂 Salt & pepper: To taste
🌿 Chopped parsley: 1 tbsp
For the Roasted Carrots:
🥕 Carrots: 4, peeled and cut into sticks
🛢️ Olive oil: 1 tbsp
🌶️ Paprika: 1/2 tsp
🧂 Salt & pepper: To taste
For the Broccoli:
🥦 Broccoli florets: 2 cups
🛢️ Olive oil: 1 tbsp
🧂 Salt & pepper: To taste
Directions
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare the Chicken: Rub chicken leg quarters with olive oil, garlic, thyme, paprika, lemon juice, salt, and pepper. Place on a baking sheet and roast for 40–45 minutes until golden brown and juices run clear (internal temperature: 165°F).
Roast the Carrots: Toss carrot sticks with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
Steam the Broccoli: Toss broccoli florets with olive oil, salt, and pepper. Roast in the oven during the last 15 minutes of chicken cooking or steam for 5–7 minutes.
Make the Mashed Potatoes: Boil potatoes in salted water until tender, about 15–20 minutes. Drain and mash with warm milk, butter, garlic, salt, and pepper. Stir in parsley for extra flavor.
Assemble: Plate the roasted chicken, mashed potatoes, roasted carrots, and broccoli. Serve warm and enjoy!
