Savory Cajun Chicken over Creamy Parmesan Linguine
Ingredients
• 2 boneless skinless chicken breasts
• 1 1/2 cups heavy cream
• 1/2 cup grated Parmesan cheese
• 8 ounces linguine
• 2 tablespoons olive oil
• 1 tablespoon Cajun seasoning
• 2 cloves garlic minced
• Salt and pepper to taste
• Fresh parsley chopped for garnish
Instructions
1. Bring a large pot of salted water to a boil. Add linguine and cook until al dente. Reserve a cup of pasta water before draining.
2. While the pasta cooks, pat chicken dry and season both sides with Cajun seasoning, plus a light sprinkle of salt and pepper.
3. Heat olive oil in a skillet over medium heat. Add chicken and cook 5 minutes per side or until golden and cooked through. Transfer to a plate and let rest for a few minutes, then slice into strips.
4. In the same skillet, lower heat and add garlic. Sauté for about 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer.
5. Stir in Parmesan cheese until sauce is smooth. If it feels too thick, add a splash of reserved pasta water until it reaches your perfect creaminess.
6. Toss drained linguine into the sauce, coating every strand. Add chicken slices on top and let everything warm together for a minute.
7. Plate it up and sprinkle with fresh parsley.
