Sweet Potato Chickpea Power Bowl
Ingredients:
1 cup cooked couscous or quinoa
1 cup roasted sweet potatoes, cubed
1/2 cup roasted chickpeas
1 cup fresh spinach
Tahini dressing for drizzle
Instructions:
1. Roast sweet potatoes and chickpeas with olive oil, paprika, salt & pepper until crispy.
2. In a bowl, layer couscous, spinach, sweet potatoes, and chickpeas.
3. Drizzle with tahini dressing and serve warm or cold.
