Steak and Potatoes Skillet
Ingredients (Serves 4)For the Steak and Potatoes:
1.5 lbs (680g) sirloin or ribeye steak, cut into 1-inch cubes
1.5 lbs (680g) baby potatoes, cut into bite-sized pieces
2 tbsp olive oil, divided
1 tsp salt, divided
1 tsp black pepper, divided
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried thyme
1 tsp dried rosemary
1 small onion, diced
3 garlic cloves, minced
1/4 cup beef broth
2 tbsp unsalted butter
2 tbsp fresh parsley, chopped (for garnish)
Instructions1. Prepare the Potatoes:
In a large skillet, heat 1 tbsp olive oil over medium heat. Add the potato pieces, season with 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp garlic powder.
Cook, stirring occasionally, for 10-12 minutes until the potatoes are golden and fork-tender. Remove the potatoes from the skillet and set aside.
2. Cook the Steak:
In the same skillet, add the remaining 1 tbsp olive oil and increase the heat to medium-high.
Season the steak cubes with the remaining 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, smoked paprika, thyme, and rosemary.
Add the steak to the skillet in a single layer (work in batches if needed). Sear for 2-3 minutes per side until browned and cooked to your desired doneness (135°F/57°C for medium-rare). Remove the steak and set aside with the potatoes.
3. Make the Pan Sauce:
In the same skillet, reduce the heat to medium. Add the diced onion and cook for 2-3 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes.
Stir in the butter until melted and the sauce is slightly thickened.
4. Combine and Serve:
Return the steak and potatoes to the skillet, tossing them in the sauce to coat evenly. Cook for 1-2 minutes to heat through.
Garnish with chopped parsley and serve directly from the skillet.
Notes
For extra flavor, add a splash of Worcestershire sauce or soy sauce to the pan sauce.
You can substitute the baby potatoes with Yukon Gold or red potatoes if preferred.
