Chicken Fried Steak with Gravy
Ingredients:
4 cube steaks (tenderized round steak)
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
Salt and black pepper to taste
2 large eggs
1/4 cup milk
Vegetable oil for frying
For the Gravy:
1/4 cup pan drippings (from frying the steaks)
1/4 cup all-purpose flour
2 cups whole milk
Salt and black pepper to taste
Directions:
Place cube steaks in a shallow dish and pour buttermilk over them. Let marinate in the fridge for 30 minutes to 1 hour.
In a large bowl, whisk together flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
In another bowl, beat eggs with 1/4 cup milk.
Remove steaks from buttermilk, allowing excess to drip off. Dredge in seasoned flour, dip into egg wash, then coat again in flour.
Heat 1/2 inch of oil in a cast-iron skillet over medium-high heat. Fry steaks one or two at a time for 3–4 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate.
For the gravy, pour out all but 1/4 cup of drippings from the pan. Whisk in flour and cook for 1–2 minutes. Slowly whisk in milk, cooking until thickened, about 4–5 minutes. Season with salt and pepper to taste.
Serve chicken fried steaks smothered in creamy gravy.
