Grilled Turkey Strips with Pesto Penne
Herbed Turkey Strips over Basil Pesto Penne Pasta
Ingredients:
400g turkey breast strips
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
300g whole wheat penne pasta
1/2 cup homemade or store-bought pesto (without cheese or alcohol)
1/4 cup cherry tomatoes, halved
1/4 cup steamed green beans
2 tablespoons toasted sunflower seeds
Fresh basil leaves, for garnish
Directions:
Cook penne pasta according to package instructions until al dente. Drain and set aside.
While the pasta cooks, heat olive oil in a grill pan over medium heat.
Season turkey strips with garlic powder, paprika, salt, and pepper.
Grill turkey strips for 4–5 minutes on each side, or until cooked through and slightly charred. Set aside.
In a large mixing bowl, toss the cooked penne with pesto until evenly coated.
Add cherry tomatoes, green beans, and sunflower seeds to the pasta and mix gently.
Serve pasta in bowls and top with grilled turkey strips.
Garnish with fresh basil before serving.
