White Chocolate Strawberry Cupcakes

Ingredients
For the Strawberry Cupcakes:
1½ cups all-purpose flour
1½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs, room temperature
½ tsp vanilla extract
⅓ cup strawberry puree (blended fresh or thawed frozen strawberries)
¼ cup milk
Optional: pink food coloring for a stronger pink hue
For the White Chocolate Buttercream:
½ cup unsalted butter, softened
4 oz white chocolate, melted and slightly cooled
2–2½ cups powdered sugar
1–2 tbsp heavy cream or milk
½ tsp vanilla extract
Pinch of salt
Optional Filling or Topping:
½ cup strawberry jam or preserves
Fresh sliced strawberries for garnish
Instructions
1. Make the Cupcakes:
Preheat oven to 350°F (175°C). Line a muffin tin with 12 cupcake liners.
In a medium bowl, whisk flour, baking powder, and salt.
In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
Add eggs one at a time, mixing well, then beat in vanilla and strawberry puree.
Alternate adding the flour mixture and milk, mixing until just combined. Add food coloring if desired.
Divide the batter evenly among the liners (fill about ¾ full).
Bake 18–20 minutes, or until a toothpick inserted in the center comes out clean.
Cool in pan 5 minutes, then transfer to a rack to cool completely.
2. Make the White Chocolate Buttercream:
Melt white chocolate in a double boiler or microwave in 15-second bursts; let cool slightly.
Beat butter until smooth and creamy.
Add cooled white chocolate and beat until combined.
Gradually mix in powdered sugar, then add cream, vanilla, and salt. Beat until fluffy.
3. Assemble:
Optional filling: Core the center of each cupcake and spoon in about 1 tsp strawberry jam, then replace the top.
Frost cupcakes generously using a piping bag or spatula.
Garnish with a fresh strawberry slice or drizzle with extra jam.
