Ingredients:
2 large apples (Honeycrisp or Fuji), thinly sliced
4 cups mixed greens or romaine lettuce
½ cup walnuts (toasted if desired)
¼ cup dried cranberries
¼ cup crumbled goat cheese or feta
Juice of half a lemon (to prevent apple browning)
For the Dressing:
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp honey
1 tsp Dijon mustard
Salt & pepper to taste
Directions:
Toss apple slices with lemon juice and set aside.
