Seared Honey Mustard Salmon over Creamy Asparagus Penne

Ingredients:

2 salmon fillets (about 6 oz each)

2 tablespoons Dijon mustard

1 tablespoon honey

1 tablespoon olive oil

1/2 teaspoon garlic powder

Salt and black pepper, to taste

8 oz penne pasta

1 cup asparagus, trimmed and cut into 2-inch pieces

1/2 cup plain Greek yogurt

1/4 cup grated Parmesan (optional)

1/4 teaspoon lemon zest

1 tablespoon lemon juice

1 tablespoon chopped fresh parsley

Directions:

In a small bowl, mix Dijon mustard, honey, olive oil, garlic powder, salt, and pepper. Brush this mixture generously over the salmon fillets and set aside to marinate while prepping other ingredients.

Cook penne pasta in salted boiling water according to package instructions. In the last 3 minutes of cooking, add asparagus to the pot. Drain and set aside.

Heat a non-stick skillet over medium heat. Cook the marinated salmon for 4-5 minutes per side, or until golden and cooked through. Remove from heat and let it rest.

In the same pot used for the pasta, mix the drained penne and asparagus with Greek yogurt, Parmesan (if using), lemon zest, and lemon juice. Stir until creamy.

Serve the pasta topped with salmon fillets, and garnish with chopped parsley.
