Chicken Spaghetti with Cajun Garlic Alfredo and Mozzarella

Ingredients:

1 pound spaghetti
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 teaspoons Cajun seasoning
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
4 tablespoons butter
4 cloves garlic, minced
3 tablespoons all-purpose flour
3 cups milk
8 ounces cream cheese, softened
1 cup grated Parmesan cheese
8 ounces mozzarella cheese, shredded, divided
1/2 cup heavy cream
Salt to taste

Directions:

1. Cook spaghetti according to package directions. Drain and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add chicken and season with Cajun seasoning, garlic powder, paprika, and black pepper. Cook until chicken is golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
3. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
4. Whisk in flour until smooth. Gradually whisk in milk until there are no lumps. Bring to a simmer, stirring constantly.
5. Reduce heat to low and stir in cream cheese and Parmesan cheese until melted and smooth.
6. Stir in cooked chicken and heavy cream. Season with salt to taste.
7. Add cooked spaghetti to the sauce and toss to coat evenly.
8. Stir in half of the mozzarella cheese.
9. Transfer spaghetti mixture to a greased 9x13 inch baking dish.
10. Sprinkle remaining mozzarella cheese over the top.
11. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until cheese is melted and bubbly.
12. Let stand for a few minutes before serving.
