Beef and Macaroni Casserole
Ingredients:
1 lb ground beef
2 cups elbow macaroni (uncooked)
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 tsp Italian seasoning
2 cups shredded cheddar cheese (or cheese blend)
1 tbsp olive oil
Salt & pepper to taste
Instructions:
Cook pasta – Boil macaroni in salted water until al dente. Drain and set aside.
Cook beef – In a large skillet, heat olive oil. Add ground beef and onion. Cook until beef is browned, drain grease. Stir in garlic, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer 5 minutes.
Combine – Stir cooked macaroni into the beef mixture until evenly coated.
Assemble casserole – Transfer mixture into a greased 9x13 baking dish. Sprinkle shredded cheese evenly on top.
Bake – Bake at 350°F (175°C) for 20–25 minutes, until cheese is melted and bubbly.
Serve – Let cool for 5 minutes before serving. Garnish with parsley if desire
