Homemade Sweet Potato Cornbread
Ingredients:
- 1 cup mashed sweet potatoes (cooked)
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
Directions:
1. Preheat oven to 375°F (190°C) and grease an 8-inch square baking pan.
2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
3. In a separate bowl, combine mashed sweet potatoes, milk, vegetable oil, and eggs, mixing until smooth.
4. Pour the wet ingredients into the dry ingredients and stir until just combined; avoid overmixing.
5. Pour the batter into the prepared pan and smooth the top with a spatula.
6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
7. Allow to cool slightly before slicing and serving.
