Salted Caramel Chocolate Chip Cookie Bars
Ingredients:
Cookie Dough:
1 cup unsalted butter
1 cup granulated sugar
1 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
½ teaspoon sea salt
1 teaspoon baking soda
2 cups semi-sweet chocolate chips
Caramel Mixture:
11 oz soft caramels, unwrapped
14 oz sweetened condensed milk
½ teaspoon sea salt flakes (such as Maldon)
Directions:
1. Preheat oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper.
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, sea salt, and baking soda.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the chocolate chips.
7. Press about two-thirds of the cookie dough evenly into the prepared pan.
8. To prepare the caramel layer, combine the unwrapped soft caramels and sweetened condensed milk in a saucepan over low heat, stirring constantly until melted and smooth.
9. Remove from heat and stir in the sea salt flakes.
10. Pour the caramel mixture evenly over the cookie dough layer in the pan.
11. Drop spoonfuls of the remaining cookie dough over the caramel layer and lightly spread to cover as much as possible.
12. Bake for 30-35 minutes or until the top is golden and set.
13. Allow to cool completely before cutting into bars.

Tips:
