Buttermilk Sweet Potato Pie
Ingredients:
- 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
- 1 cup sugar
- 1/2 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 unbaked 9-inch pie crust
Directions:
1. Preheat oven to 350°F (175°C).
2. Pierce sweet potatoes with a fork and bake them whole for about 45-60 minutes until tender. Allow to cool, then peel and mash.
3. In a large bowl, combine mashed sweet potatoes and sugar, mixing until smooth.
4. Add buttermilk, eggs, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix thoroughly to combine all ingredients.
5. Pour the filling into the unbaked pie crust, smoothing the top with a spatula.
6. Bake for 50-60 minutes, or until the filling is set and a toothpick inserted near the center comes out clean.
7. Allow the pie to cool completely on a wire rack before serving. Refrigerate leftovers.
