Cookies and Cream Brownie Ice Cream Cake
Ingredients:
- 1 box brownie mix (plus required eggs, oil, water as per box)
- 1.5 quarts cookies and cream ice cream, softened
- 1 cup crushed Oreo cookies
- 1 cup chocolate chip cookie chunks
- 1 cup brownie pieces (extra from baking or store-bought)
- 8 oz semi-sweet chocolate chips
- 1/2 cup heavy cream
- Whole Oreo cookies, chocolate chip cookies, and brownie squares for topping
Preparation steps:
1. Preheat oven to 350 degrees F and prepare a 9-inch springform pan with nonstick spray.
2. Bake the brownie mix according to package instructions in the springform pan. Let cool completely.
3. Spread half the softened ice cream over the cooled brownie base. Sprinkle with half the crushed Oreos.
4. Add another layer of ice cream and top with remaining crushed Oreos. Freeze for 2 hours.
5. Make ganache by heating chocolate chips and heavy cream in microwave, stirring until smooth. Let cool slightly.
6. Pour ganache over the frozen cake, allowing it to drip down the sides.
7. Top with brownie pieces, cookie chunks, and whole cookies. Freeze for another hour before serving.
